Gluten Free Lemon Poppyseed Pancakes

How to make the best gluten free and dairy free lemon poppyseed pancakes.


These pancakes are my go to when making breakfast for family and friends. Even if you aren't gluten free, these pancakes are sure to impress. When I made these for my girlfriends, they couldn't tell the difference. They can easily be made vegan by substituting a flax egg for a regular egg. They won't be quite as fluffy but still delicious.

These pancakes are so good with fresh blueberries when they are in season. This recipe makes 10-11 pancakes.


 

Ingredients

Dry Ingredients

  • 1 1/4 cup (115 g) oat flour

  • 1/2 cup (48 g) almond flour

  • 1/4 cup (32 g) arrowroot flour (tapioca flour works too)

  • 2 Tbsp (18 g) coconut sugar

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 Tbsp (9 g) poppy seeds

  • Zest from 1 lemon

Wet Ingredients

  • 3/4 cup unsweetened almond milk (180 g)

  • 1/4 cup fresh squeezed lemon juice (22 g)

  • 1/2 cup unsweetened applesauce (122 g) or neutral oil of choice

  • 1 egg or flax egg (1 Tbsp ground flaxseed, 3 Tbsp water)

Preparation

  1. Make the flax egg, if using, by combining 1 Tbsp of ground flaxseed with 3 Tbsp water in a small bowl and set aside to thicken.

  2. Heat your griddle on medium heat while you prepare the rest of the ingredients.

  3. In a large bowl, whisk together the dry ingredients: oat flour, almond flour, arrowroot flour, coconut sugar, baking powder, baking soda, poppy seeds, and lemon zest.

  4. In a separate bowl (I like to use a 2-cup glass Pyrex), whisk together the wet ingredients: almond milk, lemon juice, applesauce, and egg or flax egg.

  5. Add the wet ingredients to the dry and whisk until combined but don't over-mix. The batter will bubble and thicken up a bit as it sits.

  6. When the griddle is hot, spoon the batter out to form pancakes.

  7. Cook for about 2 minutes (depending on your cooking surface) or until the edges firm up. Flip and cook for another 2 minutes.

  8. Serve with vegan yogurt, blueberries, maple syrup or whatever toppings you like.
